“right idea, poor execution”

When I heard that Din Tai Fung, the renowned Michelin Star restaurant from Taiwan, was offering a giant Xiao Long Bao for a limited time only I knew this was not an opportunity to be missed.

Thank goodness we got here long before the masses started to arrive because the entire courtyard was filled out by the time we left. It was interesting how the chef personally brought the dishes out. You get a sense that the individual is taking responsibility for the piece of work being presented.

It’s not a trip to Din Tai Fung if you don’t get the Xiao Long Bao

It would not feel right leaving Din Tai Fung without downing 4-8 pieces of these delightful treats. Dip it in a mixture of vinegar and soy sauce (with shreds of fresh ginger) for maximum satisfaction. These dumplings are typically served first and you might be tempted to let them cool down but in doing so the soup disappears which consequently ruins the overall experience. There’s nothing to discuss here, Xiao Long Bao is a staple that speaks for itself.

Setting you back nearly $5 a piece you really cannot let one drop of this dumpling go to waste. If you’re a fan of truffle then it is worth the hefty price. There are actual bits of truffle in this dumpling, not just flavouring if you’re worried about being disappointed.

I applaud how brave Din Tai Fung were with their ‘Dumpling Gems’ range. Each of these coloured dumplings contains a different filling, some great, some missing the mark. The most notable were the Citrine, Onyx and Sapphire. It was impressive how accurately each flavour was represented even though not all of them were enjoyable.

When these tiny nuggets were placed in front of me my initial reaction was “You guys ordered this?! Are you serious?!” But after taking one bite I quickly withdrew my disgust. The chicken pieces are crunchy and blissfully tender. If you are looking for a side dish to eat with your noodles then look no further. You’ll even find yourself contemplating a second serving after experiencing its delicious simplicity.

I’ve been to Din Tai Fung a few times now and I can’t wholeheartedly say one noodle dish is better than another. They are all great and offer their own qualities to be savoured. The braised beef noodles had a light broth making it easy to consume. If you’re after a more flavourful noodle dish then the Dan Dan sesame noodles are for you.

Giant Xiao Long Bao:

The glory of the Xiao Long Bao starts with the delicate skin. Once pierced, pork and shrimp flavoured broth flow forth blistering your mouth in the best way possible as you desperately chew on the minced meat.

This Bao did not capture any of it.

It did not resemble anything like a Xiao Long Bao nor did it contain any of the wonderful traits as described above. Slurping the broth out of the dumpling might sounded like a good idea but in practice it did not yield the same satisfaction. The meat to skin ratio was out of balance resulting in a lot of empty space once the soup was drained. In the end the result was a messy pile of skin with soup pouring out faster than I could drink it. They had the right idea, but poor execution.

Summary: This experience taught me that part of the reason why Xiao Long Bao is so good is because you can fit the whole dumpling in your mouth allowing all the different elements to take place at once.
